BERGAMOT: SWEET AND SAVOURY RECIPES
If until recently the uses of bergamot were mainly perfumes and essential oils , now that its beneficial properties have been discovered its use has also landed in the kitchen. There are many savory and sweet recipes based on bergamot, this Calabrian citrus fruit with a very sour taste: in addition to the juice to drink, with bergamot it is possible to prepare jams and liqueurs, but also a nice risotto and other super tasty and original dishes. Here are some original recipes based on bergamot, to make for a special occasion or for a quiet evening in company.
BERGAMOT: JUICE
Before starting with the recipes to propose, we must specify that bergamot has countless properties, among which the reduction of bad cholesterol and cardiovascular problems stand out. Bergamot juice is therefore excellent to consume in these cases: if you do not like its very sour taste, you can mix it with apple juice or add sweetener.

BERGAMOT: JAM
Bergamot jam is excellent when accompanied with biscuits or rusks, and perfect to use as an ingredient in the preparation of cakes and tarts. Here is the recipe.
Ingredients
- 2 kg of bergamots
- 1.6 kg of sugar (better organic cane sugar)
Preparation
Wash and peel the bergamots, also removing the white part. Dice.
Put everything in a pan with the sugar and stir occasionally.
Cook for an hour and a half. To check the consistency, slide a teaspoon of jam onto a saucer: if it is thick enough, the mixture is ready, otherwise continue cooking.
Turn off the heat and put the hot jam into sterilized jars, close them and turn them upside down.

BERGAMOT: SAVOURY RECIPES
APPETIZERS
For a bergamot-based menu, you can prepare, as an appetizer, canapés made with kiwi and shrimp marinated in bergamot. Here is the recipe.
Ingredients for 2 people
- 8 fresh prawn tails
- 2 kiwi
- half a spoonful of sugar
- 1 tablespoon olive oil
- salt and pepper
Preparation
Squeeze the bergamot into a bowl and add the sugar, oil, salt and pepper. Mix and set aside. Wash the fresh prawns and cook them in a saucepan with a little water and a pinch of salt for 3 or 4 minutes. Shell them and put them in the bergamot juice prepared previously. Wash and peel the kiwis and cut them into slices. Add them to the bowl with the bergamot juice and leave to marinate together with the prawns for a couple of hours. Drain everything and arrange the kiwi slices on small plates and place a prawn on each slice. Garnish with a slice of bergamot and keep in the fridge until ready to serve.
BERGAMOT RISOTTO: RECIPE
Bergamot risotto is a first course that is also very popular abroad: let's see how to prepare it.
Ingredients for two people
- 120 g of arborio rice
- 30 g of butter
- 1 teaspoon extra virgin olive oil
- half a Tropea spring onion
- 1 litre of vegetable broth
- salt and pepper
- a spoonful of bergamot juice
- 30 g of grated parmesan cheese
- grated organic bergamot peel
Preparation
Chop the spring onion and sauté it in a pan with a little oil. Add the rice and toast it, adding a pinch of salt. Add the bergamot juice a little at a time and let it evaporate. Pour in two ladles of broth and cook the rice. Add more broth if necessary and, at the end of cooking, mix with butter and parmesan. Serve with a sprinkling of grated bergamot peel and a little black pepper.

SAVOURY RECIPES WITH BERGAMOT: BERGAMOT SCALOPPINE
As a second course, you can prepare scallops, varying the classic recipe a little:
Ingredients
- Veal rump
- Flour
- Butter
- White wine
- Waterfall
- Salt
- Bergamot juice
- Bergamot peel
Preparation
Flour the veal slices and place them on a plate. Melt the butter in a pan and cook the slices. Add salt and white wine. Add the bergamot juice and a little water. When the sauce thickens, plate and serve with grated bergamot zest on top.
BERGAMOT RECIPES: SWEET
To complete our bergamot menu, we are missing a dessert: we propose some muffins that are very easy to prepare.
Ingredients
- 200 g of 00 flour
- 80 g of sugar
- half a sachet of baking powder
- 1 bergamot
- 2 eggs
- half a cup of melted butter
- a pinch of salt
Preparation
Turn the oven on to 180°.
Place eggs, bergamot juice and cooled melted butter in a bowl. Beat with a whisk for a few minutes.
Add sifted flour, sugar and yeast. Mix avoiding lumps.
Add the grated bergamot zest and place the mixture into the moulds, filling them ¾ full.
Bake for 20 minutes. Turn off and let cool in the oven.
Brush with icing made with icing sugar and bergamot juice.
