PASTA WITH AVOCADO AND TUNA: RECIPE

Ingredients for 2 people
200 g. of wholemeal penne rigate
1 avocado
1 lime
150 g. tuna in oil
5 cherry tomatoes
salt and pepper to taste
extra virgin olive oil
Preparation
Put the water to boil in a pot, add salt and the pasta.
Once ready, drain and let the penne cool in a bowl.
Wash the avocado, cut it in half, peel it and dice it. Add lime juice and set aside.
Wash and dice the cherry tomatoes. Add the avocado, tuna, salt, pepper and oil.
Add the pasta, mix and the dish is ready!
AVOCADO AND WALNUT PASTA: HOW TO PREPARE IT
Pasta with avocado and walnuts is perfect for those who want an original and alternative first course, perhaps to present during a dinner with friends or a special evening. Even in this case, the preparation is quite quick and the ingredients are few:
Ingredients for 3 people
250 g of farfalle
70 g. of walnuts
1 avocado
100 ml cooking cream
salt and pepper to taste
coriander to taste
Preparation
Wash and peel the avocado, removing the stone. Dice it and blend it together with the walnuts.
Then add the cream, salt, pepper and coriander. Blend until you get a nice smooth mixture.
Put the water to boil in a pot, add salt and add the farfalle.
Stir the pasta into the prepared mixture and serve garnished with coriander and chopped walnuts.
PASTA WITH AVOCADO PESTO: RECIPE
Avocado pesto could be a great variation of traditional pesto: it is a lighter and much more nutritious condiment, which can also be used to prepare delicious bruschetta or a quick sandwich. Let's see how to prepare the pasta:
Ingredients for 4 people:
350 g. of spaghetti
2 avocado
80 g. of pine nuts
1 lime
8 basil leaves
salt and pepper to taste
1 chili pepper
extra virgin olive oil to taste
Preparation
Peel the avocado, remove the stone and cut into cubes.
Place the avocado in the blender along with the pine nuts, lime juice, basil, chili pepper, oil, salt and pepper. Blend until creamy.
Boil water in a pot, add salt, add the spaghetti and drain al dente.
Mix the spaghetti with the pesto and serve garnished with pine nuts and a few basil leaves.
