BITTER ORANGE MARMALADE: RECIPES

They burn fat, aid digestion, increase the feeling of satiety: these are some of the beneficial properties of bitter oranges , citrus fruits used in cosmetics, pharmaceuticals and obviously in cooking. There are many recipes based on bitter oranges , from liqueurs to candied oranges to jams. In this guide we focus on bitter orange jam, for which we offer 3 very simple variations.

BITTER ORANGE MARMALADE: ENGLISH RECIPE

The first recipe we propose is the classic English bitter orange marmalade, called “marmalade”, unlike the others which are instead called “jam” and have a completely different preparation. Let’s find out how to prepare it!

Ingredients:
- 2 kg of organic bitter oranges
- 3 liters of water
- juice of 2 lemons
- 3 kg of sugar

Preparation:

Wash the oranges well and cut them in half.
Squeeze them and put the seeds and the pulp collected with a spoon in a cloth bag.
Cut the peels into strips and place them in a non-stick pan with the squeezed juice, the cloth bag and the water. Leave to cook for 2 hours.
Sanitize jars and lids.
Remove the bag by squeezing it to remove excess juice.
Add the sugar and the juice of two lemons, mix and bring to the boil, cooking for another 5 minutes.
Place the jam in the jars and close well, taking care to create a vacuum.

BITTER ORANGE AND CINNAMON MARMALADE

Do you like spicier flavors? The second recipe we propose is a bitter orange marmalade with cinnamon flavor.

Ingredients:
- 2 kg of bitter oranges
- 1 kg of brown sugar
- a cinnamon stick
- water to taste

Preparation:
Wash the oranges well and peel them, being careful not to remove the white part.
Boil the peels in a pan for 20 minutes, remove from the heat and chop them.
Peel the oranges, removing the white part, cut the pulp into small pieces and place in a pan with the peel, cinnamon and sugar.
Cook, stirring occasionally.
When the jam has thickened, transfer it hot into previously sanitized jars. Let the jars cool upside down and store.


BITTER ORANGE MARMALADE WITHOUT SUGAR

For those who want to stay in shape and would like a light recipe, here's how to prepare bitter orange marmalade without sugar:

Ingredients:
- 500 g of bitter oranges
- ½ glass of warm water
- juice of half a lemon
- 1 apple

Preparation:
Wash the oranges well and peel them, avoiding the white part. Set the peels aside.
Peel the oranges, removing the white part, and leave to macerate in a bowl with the apple cut into small pieces and the lemon juice for 80 minutes.
Place the mixture together with the peels in a pan and cook over low heat for about 45 minutes, adding half a glass of water, stirring occasionally to prevent the jam from sticking to the bottom.
Once the right consistency is reached, put the jam into sterilized jars, let them cool upside down and store.
